Bleu Cheese Steak Salad
Tender seared steak, creamy bleu cheese, crisp vegetables, roasted corn, and crunchy onions come together over fresh greens with a tangy homemade bleu cheese dressing.
Instructions

Season the steaks on both sides with garlic powder, onion powder, salt, and black pepper. Rub with the olive oil.

Heat a skillet or grill pan over medium-high heat. Cook the steaks for 3 to 4 minutes per side for medium-rare, or until they reach your preferred doneness.

Transfer the steaks to a cutting board and let them rest for 5 minutes. Slice thinly against the grain.

While the steak rests, make the dressing. Whisk together the bleu cheese, Greek yogurt or mayonnaise, buttermilk, red wine vinegar or lemon juice, Dijon mustard, garlic powder, salt, and black pepper until combined.

Add the mixed greens, cherry tomatoes, cucumber, red onion, roasted corn, and parsley to a large bowl or divide between two individual bowls.

Arrange the sliced steak over the salad and drizzle with the bleu cheese dressing.

Finish with the crispy onions or shallots and serve immediately.

Let the steak rest for about 5 minutes before slicing. This helps keep the juices in the meat instead of running out onto the cutting board.
Make it your own.
Add avocado, roasted peppers, or extra tomatoes, or swap the roasted corn for another vegetable. For additional crunch, add toasted walnuts or pecans instead of crispy onions.
