TACOS
Honey Lime Shrimp Tacos
Sweet, zesty shrimp with lightly caramelized edges, crunchy cabbage slaw, creamy avocado, pico de gallo, and a bright lime crema tucked into warm tortillas.
Instructions
-
In a bowl, whisk together the honey, lime juice, olive oil, garlic powder, smoked paprika, salt, and black pepper.
-
Add the shrimp and toss until evenly coated. Let marinate for 10 minutes while you prepare the remaining components.
-
Heat a skillet over medium-high heat. Add the shrimp in a single layer and cook for 2 to 3 minutes per side, or until pink, opaque, and lightly caramelized. Remove from the heat.
-
In a medium bowl, toss together the green cabbage, red cabbage, carrots, cilantro, lime juice, honey, and salt.
-
In a small bowl, whisk together the Greek yogurt or sour cream, mayonnaise, lime juice, garlic, honey, salt, and black pepper. Add water 1 teaspoon at a time until the crema reaches your preferred consistency.
-
Warm the tortillas in a dry skillet or over an open flame until soft and lightly charred.
-
Assemble the tacos with slaw, honey lime shrimp, avocado, pico de gallo, and lime crema. Garnish with extra cilantro and serve with lime wedges.
Simple tip.
Cook the shrimp in a single layer and avoid overcrowding the skillet. If necessary, cook them in two batches so they caramelize instead of steaming.
Make it your own.
Add jalapeño, pickled red onions, extra avocado, or fresh mango. You can also increase the lime juice for a sharper citrus flavor or add a pinch of chili powder for a little heat.
