Sesame Chicken Crunch Salad
A colorful, flavor-packed salad with sesame chicken, crunchy vegetables, edamame, and crispy wontons tossed in a creamy sesame ginger dressing. Sweet, savory, fresh, and full of texture.
Instructions

In a bowl, whisk together the soy sauce, honey, sesame oil, garlic, ginger, and black pepper. Add the chicken and turn to coat. Marinate for 10 minutes, or longer if you have time.

Heat the olive oil in a skillet over medium-high heat. Cook the chicken for 4 to 5 minutes per side, or until cooked through and lightly caramelized.

Transfer the chicken to a cutting board and let it rest for a few minutes, then slice into strips or bite-sized pieces.

In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic. Add warm water 1 tablespoon at a time until the dressing is creamy and pourable.

Add the romaine, napa cabbage, red cabbage, carrots, edamame, cucumber, and green onions to a large salad bowl.

Arrange the sliced sesame chicken over the salad. Drizzle with the sesame ginger dressing and toss gently to combine.

Finish with crispy wonton strips and sesame seeds. Serve immediately.

Keep the wonton strips separate until just before serving so they stay crisp instead of softening in the dressing.

Add mandarin orange segments, cilantro, avocado, snap peas, or extra edamame. For more heat, whisk a little sriracha or chili sauce into the sesame ginger dressing.
