Strawberry Goat Cheese Salad

Sweet strawberries, creamy goat cheese, crunchy pecans, and fresh greens come together with a simple balsamic vinaigrette for a bright salad with plenty of flavor and texture.

Instructions

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, garlic, salt, and black pepper until smooth and well combined.

  2. Add the spring mix, strawberries, blueberries if using, red onion, pecans, and goat cheese to a large salad bowl.

  3. Drizzle the balsamic vinaigrette over the salad.

  4. Toss gently until the greens and toppings are lightly coated.

  5. Taste and adjust the seasoning if needed. Serve immediately.

Simple tip.

Toast the pecans in a dry skillet for 2 to 3 minutes before adding them to the salad. This brings out their flavor and gives the salad even more crunch.

Make it your own.

Add grilled chicken if you want more protein, swap blueberries for another berry, or use toasted walnuts or sliced almonds instead of pecans. Feta also works well in place of goat cheese.
