Creamy Lemon Tahini Dressing

Bright, creamy, and tangy with nutty tahini, fresh lemon, garlic, Dijon, and a touch of sweetness. An easy dressing for salads, grain bowls, roasted vegetables, wraps, and tacos.

Instructions

  1. Add the tahini, lemon juice, olive oil, garlic, maple syrup or honey, Dijon mustard, sea salt, and black pepper to a medium bowl.

  2. Whisk until smooth and creamy. The tahini may initially thicken as the lemon juice is incorporated. Continue whisking until evenly combined.

  3. Add 2 tablespoons of water and whisk again. Continue adding water 1 tablespoon at a time until the dressing reaches your preferred consistency.

  4. Taste and adjust the lemon, salt, pepper, or sweetness as desired.

  5. Use immediately or transfer to an airtight container and refrigerate for up to 1 week. Stir or shake well before serving.

Simple tip.

Start with less water if you want a thicker, spoonable sauce for grain bowls. Add more water gradually for a lighter, pourable salad dressing.

Make it your own.

Add extra lemon for more brightness, a little more maple syrup or honey for sweetness, or a pinch of cumin or red pepper flakes for another layer of flavor.
